This seasoning can be used on any kind of game bird for any style of cooking. I love to rub Big Billy's Poultry Rub all over chicken before grilling. Add to your favorite marinade and basting sauce. Rub inside and out, and under the skin when roasting or smoking a whole bird for a great taste. I mix it with dry breading to coat the bird before frying. I also use it on vegetables, in sauces, and soups.
